Gluten-Free Strawberry Bread PDF Print E-mail


4 eggs, beaten
2 c mashed strawberries
3 c gf flour mix
1-1/2 tsp xanthan gum
1 tsp salt
¼ flaxmeal (grinded and optional)
1-¼ c oil
1 tsp vanilla and almond extract
1 tsp cinnamon
1 tsp baking soda
1-¾ c sugar
1 c chopped walnuts

Beat eggs, add oil, strawberries and extracts. Whisk together the dry ingredients and add to the wet mixture. Stir in walnuts. Pour into 2 greased and floured 9x5 loaf pans. Bake at 350 degrees for 1 hour. Cool 10 minutes and remove from pans
