Gluten-Free Pumpkin Bars PDF Print E-mail


1 16oz can of pumpkin
2 cups sugar
1 cup Crisco oil
4 eggs
2 cups gluten free flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt.
3/4 pkg of 8oz of cream cheese
5 tbsp of softened butter
1-3/4 cups powdered sugar
3-4 tsp milk
Preheat oven to 350. In a mixing bowl, beat pumpkin,sugar and oil. Add eggs, mix well. Add in flour, baking soda, cinnamon and salt. Beat until well blended. Pour into a jelly roll pan or a 15x10x1 inch pan. Bake until done usually for 25-30 minutes or until a tooth pick comes out clean in the center of bars.
Beat cream cheese, butter and vanilla in a mixing bowl until smooth, gradually add sugar, mix well. Add milk until frosting reaches desired spreading consistency.  Spread over completely cooled pan of bars.
