Gluten-free Holiday Peanut Butter Cookies PDF Print E-mail

Adapted from Crisco Peanut Butter Cookie recipe


3/4 cup peanut butter
1/2 cup (1 stick) butter flavor Crisco shortening
1-1/4 cups firmly packed brown sugar
3tbs milk
1tbs vanilla
1-3/4 cup Bob's red mill All purpose Gf baking flour
1tbs xanthum gum
3/4 tsp salt
3/4 tsp baking soda
5 Tbs granulated sugar
About 36 hersey kisses or brach's chocolate stars
Heat oven 375 degrees
Combine peanut butter, crisco, brown sugar, milk and vanilla in lg bowl. Beat at medium speed until well blended.
Combine gf flour, salt, baking soda, and xanthum gum Mix just until blended. Roll heaping teaspoonfuls of dough into a ball.  Roll in sugar. Place 2 inches apart onto ungreased cookie sheet.

Bake for 7-8 minutes or until set and just beginning to brown. Remove from oven and push chocolate kiss or star into the center. Cool 2 minutes on cookie sheet then transfer to cookie rack to cool. Makes 3 dozen cookies.
